Vegan Banana Pudding

Vegan banana pudding is the perfect conclusion to any meal and its appearance at the table will invariably be met with cheers!

Our vegan version of Southern-style banana pudding uses coconut milk to get the creamy richness that egg yolks give the vanilla custard in the non-vegan version.

Instead of the meringue called for in the non-vegan version, this banana pudding recipe calls for Coconut Cream as a topping.

Total prep & cook time: 30 minutes, plus two hours for chilling

  • 1 can full fat coconut milk
  • 1 1/3 cup unsweetened almond milk or other non-dairy milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/8 tsp salt
  • 2 tsp vanilla extract
  • 1/4 tsp rum extract (optional)
  • 4 ripe bananas cut into slices
  • 8 oz vegan vanilla wafers
  • 1 recipe coconut cream
  • Additional banana slices and vanilla wafers for garnishing (optional)

  1. Mix the cornstarch, sugar, and salt in a heavy-bottom saucepan
  2. Add 1/2 cup of the non-dairy milk and whisk to make a smooth paste
  3. Whisk in the remaining non-dairy milk and coconut milk
  4. Cook on medium high, whisking constantly, until the mixture thickens and begins to bubble
  5. Turn down heat and simmer for one minute
  6. Remove from the heat and stir in vanilla and rum flavoring
  7. In a large clear glass bowl or individual serving-sized glass dishes layer wafers, banana slices and then pudding, starting with vanilla wafers. You should have enough to do two layers of each ending with a layer of pudding
  8. Cover the pudding with plastic wrap and chill for 2 hours
  9. Top with Coconut Cream and garnish with banana slices and vanilla wafers if desired

Recipe Tips:

If you can't find vegan vanilla wafers, substitute vegan graham crackers, ladyfingers, or other vegan cookies. We used Mi-del Vanilla Snaps.

To make this banana pudding recipe gluten-free, substitute gf vanilla cookies.

If you don't mind your Coconut Cream topping getting a little melty, go ahead and try this pudding warm. Yum!
